LEARN HOW TO MAKE ANGLO-INDIAN CHICKEN AND MEAT ROASTS, CHICKEN IN RED WINE AND COLONIAL MULLIGATAWNY SOUP 

Have you always wanted to make the perfect Chicken or Meat Roast and never knew how to do it? Well here’s your chance to learn how to make the perfect Anglo-Indian Chicken Roast, Beef or Mutton or Lamb Roast with mash Potatoes, Lip smacking Chicken in Red Wine and a Colonial Mulligatawny Lamb Soup

These dishes are taught at A SPECIAL ONE OF A KIND COOKING SESSION / WORKSHOP IN BANGALORE conducted by Bridget White-Kumar (Independent Food Consultant and Author of 7 recipe books on Anglo-Indian Cuisine) in Bangalore.         

The Cooking Sessions are conducted at Raheja Residency in Koramangala 3rd Block in a state-of-the-art kitchen on a ONE-ON-ONE BASIS as well as in SMALL GROUPS at your convenience

These are the dishes that will be taught at the Special Cooking Session

1.     Chicken Roast with steamed and sautéed vegetables
2.     Anglo-Indian Meat Roast – Beef / Pork / Mutton or Lamb as per preference
             with mash Potatoes
3.     Lip smacking and Tongue tingling Chicken in Red Wine
4.     Colonial Mulligatawny Lamb Soup

ABOUT THE COOKING CLASSES / WORKSHOPS
·        Interactive and hands on workshop where the participants would actually do the cutting, chopping and preparation / cooking of the dishes, thereby learning the whole process of roasting with accompaniments
·       4 Colonial Anglo-Indian Dishes will be taught per lesson. Participants will learn about the History and Evolution of Anglo-Indian Cuisine and how the various dishes got their names.
·       Participants will learn how to plate and serve the dishes prepared at the workshop and will enjoy the same for their lunch.
·       Each participant will get to take home the Recipes of the dishes prepared at the workshop.
·       A Copy of Bridget’s new Recipe Book “SIMPLE EGG DELICACIES’ would be gifted to each participant.

CHARGES:

 A Reasonable Fee of Rs.3000.00 per participant for learning 4 Dishes. (This includes the ingredients required for the lesson)

CULINARY TRAINING IN ANGLO-INDIAN CUISINE AT RADISSON BLU GRT CHENNAI




I’ve just finished a culinary training session in Colonial Anglo-Indian Dishes for the chefs and staff at Radisson Blu GRT Chennai from 25th November to 30th November 2019 showcasing the culinary legacy of Anglo-Indian Cuisine concentrating more on popular dishes cooked and relished in Anglo-Indian Homes.

We recreated and brought to life forgotten foods and simple dishes of yore such as Ding Ding made with marinated pieces of Chicken and Yam, Grandma's Country Captain and BoBo Curries, Hearty Stews and Broths with a dash of Wine, Devil Fries and Vindaloo, Rissoles and Potato Chops, Cheesy Bakes and Apple Crumble etc.

Also Conducted a Master Class in selected Anglo-Indian Dishes where the participants were part of the interactive and fun filled session.

We recreated and brought to life forgotten foods and simple dishes of yore such as Ding Ding made with marinated pieces of Duck, Hearty Stews and Broths with a dash of Wine, Devil Fries and Vindaloo, Rissoles and Potato Chops, Cheesy Bakes and Apple Crumble etc.

COOKING CLASS IN SIMPLE INDIAN DISHES

Was delighted to conduct a Cooking Class on 15th June 2019 in Simple Indian Dishes for Ellen and Sarah. Ellen is from Australia and Sarah comes from the U K. Both of them have come to Bangalore on Official work and were keen to learn how to make a simple Pilaf and a Simple Chicken Curry.
These were the Dishes that I taught them to cook and they were extremely pleased to see the results of their labours. They were delighted to pack and take home the food that they had learnt to cook.
